Rice Grains Potatoes
Not Fat free, low cal, but always a favourite on a buffet table.
6 good size baking potatoes
2 10oz cartons sour cream
1½ cups shredded sharp cheddar cheese
1 bunch green onions, chopped
1½ tsp salt
½ tsp pepper
¼ tsp paprika
Cook potatoes on jackets until fork tender. Peel and shred potatoes into a large bowl. Gently stir in sour cream, 1 cup cheese, onions, salt and pepper. Turn into a greased 2 qt casserole. Top with remaining cheese and sprinkle with paprika. Cover and refrigerate several hours or overnight. Bake uncovered 350F for 30-40 minutes.
