Asparagus or (mixed greens)with Soy-Lemon Dressing

1/4 lbs thin asparagus, cut diagonally1 1/2"
8 green onion, cut diagonally1 1/2"
1 head romaine lettuce, cut crosswise 1/2"
1/4 cup cashews, chopped
3 green onion, minced
1/8 tsp pepper
lemon juice, to taste
salt, to taste
1 1/2 Tbs oil
1/4 Tbs fresh ginger, minced
2 green onion
1/2 cup chicken stock
1 Tbs cider vinegar
1 tsp Soy Sauce
1/2 tsp sugar

Dressing : Heat oil over medium heat. Add ginger & stir until beginning to colour. Blend in green onions& cook 3-4 seconds Mix in stock, 1tbsp vinegar,soy sauce & sugar. Set aside Cook vegetables except lettuce til tender crisp. Chill quickly in ice water, drain & dry on paper towels.Just before serving, mince remaining 3 onions. Transfer to large bowl. Add all remaining vegetables. Bring dressing to boil over medium heat. Boil 30 sec. Stir in 1/8tsp pepper. Taste & add salt,lemon juice to taste as well as the remaining vinegar.Toss salad with simmering dressing and serve at once

More Notes:

If asparagus is not available then you can substitute the following; broccoli,green beans, snow peas,celery or green peppers.
